Grilled Breakfast Casserole

A quick and easy breakfast casserole that can be made ahead of time. Great on the grill, over the campfire or hot out of the oven.
Go Get This Stuff
  • 6 extra large eggs
  • 1/2 pound breakfast meat
  • 3 cups frozen hash brown potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
Then Do This
  1. In a large mixing bowl, add eggs and whisk.
  2. Add remaining ingredients and stir until well blended.
  3. Pour mixture into an an 9-inch cast iron skillet.
  4. Preheat a grill for indirect cooking at about 350 °F (177 °C)
  5. Place skillet on the grate opposite the fire and cover grill.
  6. Cook for 25 minutes.
  7. Rotate skillet half-way and cook an additional 20 minutes.
  8. Casserole is done when a knife inserted in the center comes out clean.
An 8" x 6" x 2" baking dish may also be used if cooking in the oven. Oven cooking time would be the same as grilling.
