Nothing says summer like this grilled chicken and peach salad!
This chicken and peach salad is not only a breeze to put together, it’s loaded with flavor. Imagine grilled peaches and smoky grilled chicken breasts resting on a bed of fresh garden greens with a hint of fresh mint and topped with a sweet and tangy peach vinaigrette. Now that’s a summer salad! Tasty and refreshing.
One of the best things about summer is the arrival of a fresh crop of fruits and vegetables. Take advantage of the fresh flavors with this salad. Enjoy!
GO GET THIS STUFF
- 2 Boneless skinless chicken breasts
- 2 Large ripe peaches pitted and cut into slices
- 3 Cups baby arugula
- 1 Cup baby spinach
- 1/4 Cup fresh mint chopped
- Salt & Pepper to taste
- Walnuts chopped (optional)
- 1 Cup peach vinaigrette Get the recipe HERE
THEN DO THIS

Prepare the peach vinaigrette and allow to rest in the refrigerator.

Heat a grill for 2-zone cooking-A hot side and a cool side. (See Note 1)

Trim chicken of any excess fat and pat dry with a paper towel

Spray or brush both sides of the peaches and chicken with cooking oil. Season chicken with salt and pepper.

Sear the chicken breasts over the hot side of the grill, about 2-3 minutes per side. Move to the cooler side of the grill.

Do the same with the peaches, cooking for about 2 minutes per side or just until grill marks are visible.

Remove peaches and close grill lid. Continue to cook chicken until an instant-read meat thermometer registers 160°F (70°C). Remove chicken from grill and cover with aluminum foil. Allow to rest for 10 minutes.

Combine the arugula, spinach and mint in a large bowl and toss. Divide into individual servings and plate.

Slice chicken breasts and lay on top of greens. Distribute the peach slices on each plate and garnish with walnuts, if using.

Ladle peach vinaigrette on top or serve on the side.
Recipe Notes
Note 1 A skillet can be substituted for the grill if desired. While you won't get the smoky flavor that the grill offers, you'll still end up with a mighty tasty salad.
