Don’t let the word “Cajun” fool you. These Cajun potatoes go well with any style dish.
These grilled Cajun potatoes are easy to prepare and grill. More importantly, they’re tasty! It’s not necessary that they be served with Cajun food, either. They go well with any type of food. They also make a great snack. You’ll love the flavors and you can adjust the spiciness to your personal preference.
- 4 large Idaho potatoes, washed and scrubbed-No need to peel
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon dried oregano leaves
- 1/4 teaspoon fresh ground black pepper
- 1/8 to 1/4 teaspoon ground cayenne pepper, or to taste
- 2 cups mesquite wood chips, soaked in water for 20 minutes
- Prepare the grill with a medium fire for direct cooking. Preheat oven to 425°F (220°C)
- Cut potatoes in half, lengthwise. Cut each half in half, lengthwise producing 4 wedges.
- Place potatoes in a large bowl and add oil and garlic. Toss to coat well.
- In a small mixing bowl, combine salt, paprika, thyme, oregano, black pepper and cayenne. Mix well.
- Sprinkle spices over potatoes and toss until coated well.
- Place potatoes in a single layer in a shallow roasting pan. Reserve remaining oil mixture left in bowl.
- Bake potatoes for 20 minutes.
- Remove potatoes from oven and cover to keep warm.
- Sprinkle mesquite chips over hot coals. Place potatoes on their sides and grill covered 7 to 10 minutes per side. Brush both sides with reserved oil mixture when turning.
