Buffalo Balls

The great flavor of Buffalo wings all wrapped up in a tidy little package. This recipe works great with ground chicken, turkey or beef.
Go Get This Stuff
  • 1 pound ground turkey
  • 1 egg, whipped
  • 1 cup breadcrumbs
  • 1 tablespoon hot sauce (Frank's works best)
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • Buffalo Sauce (See recipe below)
For the Buffalo Sauce
  • 1/4 cup hot sauce (again, use Frank's)
  • 6 tablespoons butter
  • 1-1/2 tablespoons vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon Worcestershire
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cayenne pepper
Then Do This
  1. In a large bowl, combine ground turkey, whipped egg, breadcrumbs, hot sauce, salt, cayenne pepper and garlic powder. Hand mix together just until evenly combined.
  2. Place bowl in freezer for 15 minutes. (The secret to forming meatballs)
  3. Preheat oven to 425°F (218°C). Lightly grease a baking sheet or line it with parchment paper.
  4. Remove meat mixture from freezer. Hand form meatballs into about an inch and a half balls and place on baking sheet.
  5. Place meatballs in oven and cook for 20 minutes or until a thermometer reads 165°F (74°C).
  6. While meatballs are cooking, mix up the sauce. Melt butter in a medium saucepan using medium heat. Add remaining sauce ingredients and whisk until well blended. Reduce heat just enough to keep sauce warm.
  7. Remove meatballs from oven and toss into the saucepan of Buffalo sauce. Remove and place on a serving platter. Pour remaining sauce over the meatballs.
  8. Serve with blue cheese or ranch dressing and toothpicks.
For spicier buffalo balls, add more cayenne to the meat blend and to the Buffalo sauce.
