Tomato and Cucumber Salad

A great summer salad that features tomatoes, cucumbers and a hint of mayo.
Go Get This Stuff
  • 1 quart cherry tomatoes, halved and seeded
  • 4 green onions, chopped
  • 2 cucumbers, halved lengthwise, seeded then sliced
  • 1 cup Greek yogurt
  • ¾ cup milk
  • ½ cup light mayonnaise
  • ¼ cup dark corn syrup or honey
  • 2 tablespoons sour cream
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon white pepper
  • 2 garlic cloves, finely minced
Then Do This
  1. Prepare vegetables and place in a large bowl.
  2. In a large mixing bowl, add remaining ingredients and whisk until ingredients are well blended.
  3. Pour over vegetables and toss until well coated.
  4. Cover and place in the refrigerator for at least an hour.
  5. Toss again prior to serving.
